Barbecue Sauce For the BBQ

Barbecue Sauce can be used for marinating food prior to barbecuing.
The ingredients should contain acids ,sugars and vinegars. This will help to break down the meat and make more tender.

Barbecue sauce is also used for basting grilled and smoked food on the BBQ to add more taste and finger licking stickiness.
This is usually applied near the end of cooking so that the sauce does not burn.

Ingredients

1 large onion, chopped
2 tablespoons demerara sugar
2 oz. (50g) margarine or butter
2 teaspoons tomato puree
1 tablespoon lemon juice
2 teaspoons mustard powder
2 tablespoons wine vinegar
2 tablespoons Worcestershire sauce
1 teaspoon clear honey
1 teaspoon chili seasoning
quarter pint (150ml) water
pinch of dried mixed herbs

Method

Melt the butter or margarine in a saucepan. Add the onion and fry gently for about 5 minutes or until the onion softens
Increase the heat a little, add all the other ingredients and stir well.

Bring to the boil, then reduce the heat and simmer for about 10 minutes, or until the sauce becomes syrupy
Ideal to serve with chicken, hamburgers, spare ribs or sausages. 

BBQ Ideas and Tips

Simple Garlic Butter
3 cloves of garlic crushed or finely chopped
1 Small handful of  fresh parsley  finely chopped
200g of butter or 100ml of olive oil
Melt the butter in a microwave oven, this takes only a few seconds. Add the parsley and garlic and stir using a fork.
Its now ready to use. 

Olive oil
Olive oil, its a must, it has many uses, once you start, you will wonder how you ever managed without it.

With so many different olive oils to choose from, try the mild ones first and occasionally experiment with the more stronger flavoured oils. Olive oil cooks at an higher temperature so will colour and crisp your food more readily. 

It is also more healthy than vegetable cooking oil.

Olive oil can be used for marinades, coating meat, brushing on to the grill to stop the meat or fish sticking. And of course on salads to give that Mediterranean flavour.
